Coffee Roasting Basics

How can you get the best tasting coffee? The key to achieving the right flavor of coffee is hidden in the roasting stage. Have you ever wondered what actually happens during roasting?

Coffee beans that ripen on the coffee tree are processed and dried. Coffee is green before the "roasting" process. In this state, there is no trace of the smell of coffee. This shows that the factor that makes coffee coffee is coffee roasting. Thanks to coffee roasting machines, it is possible to obtain hundreds of flavors depending on the type of process. These aromas allow the creation of coffee aromas that people love.

Coffee roasting is the process of turning coffee beans brown. The way it is made directly affects the taste of the coffee. Therefore, the use of the coffee roasting machine, brand selection and quality are very important.

Coffee Roasting Basics What are the stages of the coffee roasting process?

1. Drying
The drying process is necessary to remove moisture from the coffee beans. During the drying phase, the process is carried out at an average temperature of 140 - 170 °C. In Ekofi coffee roasting machines, the drying process is carefully monitored in automatic models to ensure that the beans do not burn.

2.Frying
It starts to get the aroma of coffee in the roasting machine at 160°C. During the roasting stage, the first coffee smells begin to reach your nose. The drying phase continues in this part as well. The Maillard Reaction, which occurs under the influence of temperature, plays a role in the formation of hundreds of new coffee aromas. We carefully design Ekofi Coffee Roasters to ensure that this stage is completed successfully and unique coffee flavors are obtained. We understand that this stage has come to an end with the first cracking of the coffee beans.

3. Roasting
The first thing that happens in the last stage is cracking. At this stage, the desired brown tones are visible and the aromas are felt. Coffee beans begin to explode as roasting continues. Uncontrolled application of temperature and careless operation may cause burning in the coffee beans after this point, causing the aroma to deteriorate. If it is possible to monitor the last stage specifically, it would be appropriate to control it with automatic units, as in Ekofi Coffee Machines.

Ekofi coffee roasting ovens recommend the right temperatures for the right flavours. Hundreds of aromas can be obtained by accurately monitoring the roasting results, which also manifest themselves in color and smell. The roasting time can be increased or decreased depending on the desired strength of the coffee. It is possible to capture very light aromas and flavors, even fruit flavors, from lightly roasted coffee beans. Basically, we can assume that light roasted coffee better reveals the character of raw coffee. It is easier to distinguish light roasted coffees from each other than dark roasted coffees.
